Unique to New Mexico are Red Chili Ristras. In the Fall, the vibrant red color of fresh red chili ristras are hung everywhere. Maybe to add beautiful color through the long cold winters, but hanging from doors and from historic old adobes, it's another one of my favorite sights. You may be familiar with Hatch Chilis, also from New Mexico.....a chili ristra is simply a Hatch chili that has turned red. Chili ristras are popular all throughout New Mexico but really a part of the Southwestern, New Mexico in and around Taos and Santa Fe. We have 2 hanging at our home and they well proved wonderful color and a little spice to your meal too as they can be eaten from the time they are fresh to when they have dried out.
